Manual harvest in 18Kg boxes, careful selection of the best grapes in the vineyard. The grapes were fully destemmed and immediately pressed. The resulting must passed into a small stainless steel tank, where it was decanted at low temperature for 48 hours. The clean must started fermentation in 500l French oak barrels, with indigenous yeasts. The wine remained in barrels for 4 months. Very slight yellowish color, very clear, on the nose it is very enveloping and very appealing. Aromas of white-skinned fruits such as peach and apricot. It is a very fat wine, with a lot of freshness and excellent acidity. It is a wine with great balance in the mouth, being present from the beginning of the mouth to the end.

After manual harvesting, the grapes are transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once at the cellar, the boxes are unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which are transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the variety and the plot, a protocol of pumping over and deletions was carried out. After malolactic fermentation, the different components aged in 225 L oak barrels for 18 months. After bottling, the wine aged for another 12 months in the bottle. It is a ruby colored wine with deep intensity. In the aroma, it presents notes of ripe black fruit, woods and balsamic nuances characteristic of the terroir of the H.O, in perfect harmony with the spicy and complex notes of the Old Vineyards. In the mouth, it presents structuring tannins balanced by the natural freshness of the wine and in harmony with the notes of aging in barrel.

The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. Following selection on a mat of choice, 30% destemmed and 70% whole bunches were introduced into the vat, allowing the extraction of color and aroma compounds more smoothly during 3 weeks of alcoholic fermentation entirely in stainless steel vats, having completed the malolactic fermentation. in stainless steel. After aging 50% of used 4-year-old barrels of 400 L and 225 L of French oak, where it remained for 12 months. Wine with a deep ruby-violet color, aromas of rockrose surrounded by notes of forest fruits in a typical Douro setting. The ripening period was less hot than usual and fresh temperatures allowed the grapes to have a good total acidity, an essential factor for a fresh and balanced palate. After a careful selection, both in the vineyard and in the cellar, the fermentation took place in trunk-conical stainless vats and wooden vats, with maceration for about 60 days.
