Manual harvest in 18Kg boxes, careful selection of the best grapes in the vineyard. The grapes were fully destemmed and immediately pressed. The resulting must passed into a small stainless steel tank, where it was decanted at low temperature for 48 hours. The clean must started fermentation in stainless steel, with indigenous yeasts and controlled temperature. It is a very aromatic wine with a very pleasant and very feminine floral nose, in the mouth it is straight, very fresh, with a lot of acidity and with a medium finish.

After manual harvesting, the grapes are transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once at the cellar, the boxes are unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which are transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the variety and the plot, a protocol of pumping over and deletions was carried out. After malolactic fermentation, the different components aged in 225 L oak barrels for 18 months. After bottling, the wine aged for another 12 months in the bottle. It is a ruby colored wine with deep intensity. In the aroma, it presents notes of ripe black fruit, woods and balsamic nuances characteristic of the terroir of the H.O, in perfect harmony with the spicy and complex notes of the Old Vineyards. In the mouth, it presents structuring tannins balanced by the natural freshness of the wine and in harmony with the notes of aging in barrel.

Fermentation takes place in truncated conical stainless steel vats, preceded by a cold maceration for 24 to 48 hours. After pressing, the wine undergoes malolactic fermentation in stainless steel and then ages in 300 liter French oak barrels for a period of 12 months. After designing the batch, it ages in the bottle for two years before being released on the market. Aroma of black fruits in jam, spice, flowers and mint. The notes of toast and dark chocolate accentuate the complexity of the wine on the nose. In the mouth it is soft, fresh, full and elegant. The finish is long, shows an enormous concentration of smooth tannins and a hint of Vidigueira. Long and persistent that leaves a fine and delicate essence of all its aromas and flavors.

The harvest is done by hand and the grapes are transported to the cellar in small boxes. This is followed by pressing the whole grape in a press and settling in a cold stainless steel tank. Then the completely clean wort is transferred to other stainless steel tanks where it is fermented at a controlled temperature of around 15ºC. The alcoholic fermentation of the wine is kept in vats only with fine sludge for another 5 months with batonnage. Before bottling it is transferred and has natural stabilization and light filtration in order to maintain all its aromatic potential and structure. Contains sulfites.
