At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. Afterwards, a small part of the must, the skins and the stalk are fermented in clay pots, and another in vats. The remainder of the brand is fermented in stainless steel vats. The use of jars gives spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week pellicular maceration, followed by a 9-month aging period in French and American oak casks. Deep red color, with aromas of dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, present but soft tannins. Long finish.

The harvested grapes were selected from the vineyard and then introduced into the vats with 40% destemmed and 60% whole bunches, allowing the extraction of color and aroma compounds more smoothly during 2 weeks of alcoholic fermentation entirely in stainless steel vats, having completed the malolactic fermentation in stainless steel. After aging 50% in used 3-year barrels of 400 L and 225L of French oak, and 50% in second-year barrels; where he stayed for 9 months. Filling and aging for 20 months in bottle. Wine with a ruby-garnet color, aromas of rockrose, red fruits with evolution to balsamic notes, light aroma of cedar, highlighting a spicy character. In the mouth velvety, long, fresh and careful. Textura da Estrela Red comes from 3 different vineyard plots, all of them in Vila Nova de Tazem (Serra da Estrela sub-region). In 2018, it was a lot composed of Vinha Velha (35%), Touriga Nacional (30%), Jaen (20%) and Alfrocheiro (15%). Vineyards aged 25 to 60 years in granitic soils, treated sustainably and without herbicides, have been converting to organic certification since 2020. On the 25th and 26th of September, the grapes were hand-picked, which after fermenting in stainless steel vats with 35 % whole bunch, stayed in cuvaison for 30 days of. Aging for 15 months in used French oak barrels and vats. Naturally stabilized. Red wine with great refinement and great freshness. It has mineral and earthy character, light pepper and some red fruit. It shows velvety and textured tannins, very fine and slightly spicy from the stem. Gastronomic when ordering food and a dry and prolonged finish. It ages to an even more elegant profile. Contains sulfites.

Manual harvest, degummed and fermented grapes with thermal control in a small volume stainless steel mill with a moderate mechanical step. Malolactic fermentation in new barrels selected from French oak in an air-conditioned environment, followed by a stage in new barrels for wine-wood integration, 18 months. After a gentle filtration, the wine was bottled and rested for thinning for 12 months in the basement. This wine was made from grapes from the oldest vineyards in the region of Borba, with two of the most emblematic and representative grape varieties of the region, Trincadeira and Alicante Bouschet, settled in shale soils.
