The Quinta Vale Maria’s Red Tints have a great depth of color, violet and dark red with a rich concentration of ripe red fruits, black cherry and plum, followed by the elegance of the traditional raspberry touch of the Vale D wines. Maria. The aging in French oak barrels concentrates the original well-ripened tannins and softens its power, giving rise to a very elegant wine, with great balance and subtlety, ending long and fruity. Manual harvest in 18Kg boxes, careful selection of the best grapes in the vineyard. The grapes were picked only by grandfather Nelson and granddaughter Maria Simões. The grapes were fully destemmed and immediately pressed. This wine aged for 6 months in new French oak barrels. It has a vivid and crystalline yellowish color. The first aroma we have is well integrated barrel notes. In the wine, we have white stone fruits such as apricots and peaches that are reminiscent of the great Dão wines. Citrus fruits that give some nose freshness to the wine. It has a pleasant breadth and a large mouth volume that accompanies the tasting from the beginning to the end. It is a wine that has some bitterness at the end, characteristic of gastronomic wines that go very well with food. It has a long and persistent finish.
José de Sousa Magnum Red

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. Afterwards, a small part of the must, the skins and the stalk are fermented in clay pots, and another in vats. The remainder of the brand is fermented in stainless steel vats. The use of jars gives spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week pellicular maceration, followed by a 9-month aging period in French and American oak casks. Deep red color, with aromas of dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, present but soft tannins. Long finish.

Manual harvest. Total destemming. Prolonged maceration in stainless steel tanks. Alcoholic fermentation with indigenous yeasts under controlled temperature for 15 days. Transfer to new and used 225L French oak barrels for 12 months, where malolactic fermentation took place. 12 months of aging in bottle before going to the market. Deep red color. Wild berries and deep complexity with well integrated wood. In the mouth it shows intense concentration, with firm tannins and excellent structure. Its acidity gives freshness and balance to the wine and a very long finish. The power and elegance of Dão in perfect harmony. This wine will age beautifully in the bottle. Perfectly accompanies duck confit, foie gras, oven-roasted veal, roasted kid, sausages. Contains sulfites.
