Grapes harvested by hand, for boxes of 25 kg, at their ideal point of maturation; intended to have a vigorous maturation, leading to higher aromatic and polyphenolic concentrations. After gentle crushing and total destemming, the grapes are fermented in stainless steel vats and wine presses, thus allowing the quality constituents present in the films of very ripe grapes to pass smoothly into the wine. After malolactic fermentation, the wine aged in used 300 liter French oak barrels for approximately 12 months.
