Grapes from 21-year-old vines, hand-picked into 20 kg boxes. The must was obtained by the open spout method with direct pressing of whole grapes, and later decanted at low temperature for a period of 24 hours. Fermented in stainless steel vats at a temperature of 15ºC for a period of 18 days. It aged naturally in contact with fine lees for 5 months in stainless steel vats. Minimal intervention. Pale pink color that reveals a delicate rosé. It is complex and intense on the nose with notes of red fruits, floral touches and evident minerality. In the mouth it has a good volume and excellent freshness.

100% of this wine is aged in wood for 10 months, in 35% of new wood. Fermented in stainless steel vats for 10 days where afterwards malolactic fermentation takes place. Dark, dense and opaque color. Intense fruit of blueberries and raspberries, dough, pastry and spices. Characteristic aromas of wild flowers present in the vineyards of Romaneira. It reveals mineral flavors, with well integrated notes of the barrel and dark chocolate. Very good tannins and excellent finesse. Contains Sulfites.

In the cellar José de Sousa still some ancestor techniques of vinification are used, being the most emblematic the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden on foot and destemmed by hand on a table called "table of ripanço". Afterwards, a small part of the must, the films and the stench are fermented in the clay pots, and another in the wine press. The remainder of the brand is fermented in stainless steel vats. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months in French and American oak casks. Red color loaded with scented dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, tannins present but soft. Long end of test. Contains Sulfites.

Produced from grapes harvested manually and selected with rigor. The fermentation took place in stainless steel mills, of small dimensions with temperature control in order to preserve all the aromatic elegance. After the fermentation it staged in 4 types of oak barrels during 12 months and the same period in the bottle. Of course, garnet color, the nose features an intense profile aroma, suggesting ripe fruit with soft wood notes and spice notes. The palate shows the full-bodied and well-balanced acidity, with robust and good tannins combined with long and elegant final finish. Contains Sulfites.

Fully produced with the Merlot grape variety, in clay-limestone soils, the climatic conditions of the Serra da Arrábida area allow the grapes of this variety to be obtained with a strong local personality. A classic, slow and controlled fermentation was carried out followed by an end of fermentation in new barrels of French "Allier" oak that contributed to the excellent integration of the aromas and flavors of the grape and the wood. The subsequent prolonged maturation in the same barrels guaranteed a complexity of complementary palate. In the mouth it is full, it has ripe fruit combined with fine but elegant but firm tannins that give it a complex and very persistent structure.
