Manual harvest on two different dates, so that all grapes are harvested with the ideal degree of ripeness. Fermentation in stainless steel vats and new French oak barrels (500 L), where the aging takes place for 6 months and with a very smooth battônage. Final batch with 45% barrel and 55% stainless steel. Delicate nose, with notes of white flowers, discreet fruit and sea air. The mouth is deep and wide, with good acidity and saline finish. Well integrated barrel, a organic wine with structure, volume and enormous elegance.

Quinta do Fojo, located on the picturesque left bank of the Pinhão Valley, is the birthplace of the exceptional Quinta do Fojo Red 2017. Manual harvest with choice in the vineyard in 20 kg boxes. Ferments at controlled temperatures. Clean and bright pale yellow color, the aroma is intense with field flowers, with citrus notes, finished with great minerality. Quinta do Vallado Magnum Red

About 80% of the grapes come from vines planted in the 1990s and 20% from old vines aged between 60 and 100 years. The grapes were vinified in stainless steel vats of 5 and 10 tons of capacity, fully destemmed. The must fermented for about a week at 23º - 25º C, with programmed automatic pumping over. About 90% of the wine was aged for 8 months in stainless steel vats and the remainder in 3rd and 4th year French oak barrels of 225 lt. Concentrated aroma, highlighting the ripe red fruits, rock rose and violet. Good structure, fleshy with round tannins. Persistent ending. Contains sulfites.
Pacheca Superior White

After careful selection for their best condition, the grapes were harvested into 25 kg trunks and sent to the vinification center where they were lightly pressed in a pneumatic press. The resulting must was sent to stainless steel vats and cooled, where it remained for 24 hours to decant. At the end of this period, it was filtered and transferred to another stainless steel vat where it was inoculated with selected yeasts, having fermented at a controlled temperature of 14-16ºC. After alcoholic fermentation, it aged in 2nd year French oak barrels with weekly bâtonnage for 6 months. Pacheca Superior White has a complex aroma, some tropical fruit notes such as pineapple and passion fruit and toasted notes from the barrel. In the mouth it is marked by exotic fruit wrapped in toasted wood notes that give it a rich body and a long and persistent finish. Contains sulfites.

Manual harvesting in 20 kg boxes with strict selection at the cellar entrance. Fermentation started in stainless steel vats with temperature control. Fermentation in used French oak barrels has ended. Aging for 8 months in used French oak barrels. The austere nose shows notes of citrus aromas and dry straw. Mineral and very elegant, it offers an enormous complexity of aromas, showing itself to be elegant and complex, concentrated and with a firm acidity and tense finish. Contains Sulfites.
Casa Velha Moscatel Galego White

Some of the best Moscatel grapes from the Favaios plateau are selected and harvested by hand. To extract the maximum aromatic richness of the grapes, a pre-fermentative maceration is carried out for 48 hours and only afterwards the clean must is extracted. The alcoholic fermentation takes place in stainless steel vats for about 15 days with a controlled temperature between 15-18ºC. Once the alcoholic fermentation is finished, a 5-month stage begins, during which contact with fine lees is promoted, after which filtration and bottling follow. Bright and citrus colored, with intense floral and fruity aromas, with emphasis on lychees, roses and tropical fruits. In the mouth it is quite elegant, fresh and balanced, with good acidity and medium structure. It ends in a balanced and persistent way. Contains sulfites.
