The grapes were harvested, after a rigorous selection in the vineyard and in the cellar, the grapes were pressed with the whole bunch, under low pressure. The must fermented 80% in used 500L French oak barrels (must from old vines) and 20% in stainless steel vats (must from new vines), remaining for 8 months. Of greenish citrine color, it presents a fresh aroma denoting complexity. It has an intense mineral character, which gives it freshness, together with notes of orchard fruit – white plum, citrus – lime zest, light aroma of smoke and spices. Frank in the mouth is mineral, enveloping with acidity tempered by the light greasiness provided by the partial malolactic produced in barrels. Contains sulfites.

The harvested grapes were selected from the vineyard and then introduced into the vats with 40% destemmed and 60% whole bunches, allowing the extraction of color and aroma compounds more smoothly during 2 weeks of alcoholic fermentation entirely in stainless steel vats, having completed the malolactic fermentation in stainless steel. After 12 months in a French Oak Balseiro preceded by a stage of more than 40 years of Cognac. Aging on fermentation lees for 6 months, followed by 3 months of rest in bottle before being marketed. With a strong connection to the terroir of Monção, Alvarinho expresses itself in Vicentino respecting its origin in an elegant combination of aromas that characterize it. The vibrant acidity and minerality end in a salty finish, highlighting the proximity to the sea. Contains sulfites.

Grapes are harvested by hand. After pressing, before fermentation, the must is clarified. Fermentation takes place in a stainless steel tank at a low temperature and in two egg-shaped deposits in our innovation area, one stainless steel and the other cement, so that the final batch, due to the constant battonage in the fine lees, transmits complexity and taste persistence superior to what we normally find in this variety. Bright lemon yellow color, elegant aroma marked by mineral and floral notes.
