The grapes were harvested, after a rigorous selection in the vineyard and in the cellar, the grapes were pressed with the whole bunch, under low pressure. The must fermented 80% in used 500L French oak barrels (must from old vines) and 20% in stainless steel vats (must from new vines), remaining for 8 months. Of greenish citrine color, it presents a fresh aroma denoting complexity. It has an intense mineral character, which gives it freshness, together with notes of orchard fruit – white plum, citrus – lime zest, light aroma of smoke and spices. Frank in the mouth is mineral, enveloping with acidity tempered by the light greasiness provided by the partial malolactic produced in barrels. Contains sulfites.

Manual harvest in 18Kg boxes, careful selection of the best grapes in the vineyard. The grapes were picked only by grandfather Nelson and granddaughter Maria Simões. The grapes were fully destemmed and immediately pressed. This wine aged for 6 months in new French oak barrels. It has a vivid and crystalline yellowish color. The first aroma we have is well integrated barrel notes. In the wine, we have white stone fruits such as apricots and peaches that are reminiscent of the great Dão wines. Citrus fruits that give some nose freshness to the wine. It has a pleasant breadth and a large mouth volume that accompanies the tasting from the beginning to the end. It is a wine that has some bitterness at the end, characteristic of gastronomic wines that go very well with food. It has a long and persistent finish.

The winemaking is classic in stainless steel vats with smooth skin maceration. Fermentation is controlled up to 26ºC for 9 days. The aging is done in French oak barrels for 6 months. Clear appearance, strong red color with hints of garnet, reveals a deep and elegant aroma of very ripe red fruits, where the notes of plum, blueberry and cherry stand out combined with soft expressions of fine vanilla, spices and dried fruits, married with a light fragrance. balsamic and faint breath of pine forest. In the mouth it shows outstanding complexity, it is round and harmonious, with good structure and balance of well integrated tannins, promising a good aging potential. From Dão, Casa da Passarella Enxertia Alfrocheiro arises from the heterogeneity of our encepting. Every year they are different in the soil-climatic conditions. From this differentiation we decided to create a wine based on the best behavior of the grape variety in the wine year. Based on this philosophy, we feel free to choose the best reflected caste each year. We inaugurated this reference with the Alfrocheiro of the year 2011. The fermentation took place in a vat of spontaneous fermentation. Stage of 12 months in barrel and 18 months in bottle. The whole process of stabilization resulted from minimalist and natural processes. Contains Sulfites.
Adega de Borba Reserva Red

With grapes from the most typical Alentejo grape varieties produced in the sub-region of Borba, the label Cortiça wine was produced, a true ex-libris from the Adega de Borba. Coming from old vines, the grapes had a strict control in the evolution of the maturation, having been harvested in small quantities. In the Cellar, after the destemming and soft crushing of the grape, the alcoholic fermentation began, which lasted for about 10-15 days with the temperature controlled at 24ºC, for greater extraction of the aromas and fruity flavors of the grape. In order to increase the polyphenolic complexity, the tannins and the structure of the wine, it remained in the vat in a post-fermentative maceration process. The malolactic fermentation occurred later in stainless steel containers. To enhance and elevate its organoleptic characteristics, the wine aged 12 months in 3rd and 4th year barrels, French oak and exotic wood barrels. followed by a six-month bottling stage in the basement. Aroma fine and elegant, suggesting black fruits, compote and white chocolate. Contains Sulfites.
Esporão Private Selection Red

Esporão Private Selection Red: Syrah and Aragonez were fermented in small stainless steel mills, with alternating step-by-step with short manual overruns done 2-3 times per day, depending on our daily taste throughout the fermentation. We prefer to ferment the Alicante Bouschet in a small stainless steel tank and we did the reassemblies manually. The reason for this choice is that this caste has a relatively brittle film, which may lead to an exaggerated extraction of tannins. After pressing, we kept the wines separated, in order to better understand the evolution of each one. The malolactic fermentation took place in the barrels and spontaneously. 30% in new barrels and 70% in used barrels (1 year), of 225l French oak barrels (Taransaud; Saury; Boutes). After 18 months of internship, during which we only made a transfer immediately after the malolactic, we made the final lot, which was bottled on May 28, 2014, only with a slight filtration and without any type of bonding. In the nose predominates the black fruit with slight notes of smoke and spices. In the palate it shows density and richness, shows itself balanced, with good acidity and fine tannins. The ending is long and persistent. Contains Sulfites.

The grape varieties were vinified separately. After a very gentle pressing of the grapes, the must undergoes a cold static decanting and a 7-day “SURLIES” stage, fermentation takes place in stainless steel vats at controlled temperature, fermenting at low temperatures. The Wardrobe gives floral and citrus and Arinto brings acidity and freshness to the set. This wine is very expressive in the vanilla aromas, it has an evident and elegant freshness.
