Aging for 22 months in new French oak casks. This is the first wine from the old vineyard plot (M7) of Quinta dos Muros. The wine that determined that this parcel should be preserved. It is the result of 27 varieties, and a lot of care and passion throughout the process. A red that deserves attention when you have it in the glass. Contains sulfites.

80% of the lot aged in second year French oak barrels for 14 months. The grapes are harvested into small boxes and received in the property's cellar. Manual sorting is followed by destemming and gentle crushing, after which the grapes are transferred to fermentation vessels using a peristaltic pump. Fermentations are followed individually and temperatures and maceration movements are adjusted in order to maximize the potential of the grapes. A period of post-fermentation maceration is carried out to promote the extraction of tannins from the seeds — complementary to the tannins from the skins — in order to favor the structure and accentuate the aging potential. Wide aromatic expression: forest floor, bush, pine needles and discreet fennel notes, later giving way to black fruits (blackberry, blueberry), black plum and traces of licorice. In the mouth some chocolate, mushroom/truffle and hint of smoked, showing the good integration of the barrel. Monumental in the mouth, with several layers providing fascinating complexity. Refined tannins combine with good acidity (discreet, but present), enhancing the formidable structure. Eminently gastronomic wine with great potential for long aging.

Organic wine: Manual harvest for small 15 kg perforated boxes, fermentation with cold technology, in a reductive environment, with controlled temperature around 16ºC. The grapes are pressed without crushing and without destemming under an inert atmosphere in order to preserve all the aromatic potential of the grapes. A great effort is made to ensure that all pre-fermentation operations are carried out with the utmost rigor, being responsible for the intrinsic quality of the future wine. The entire wine is fermented in used French oak and remains there after a small racking over fine lees with periodic “battonage” stirring until the final blend is made. 6 months in French oak barrels, fermentation and agitation stage with fine lees, coming from the very sandy Upper Douro granitic soil at an average altitude of 575 meters. It has a citrus and mineral aroma, grapefruit notes, discrete exotic fruits and country flowers. Very persistent and fresh mouth with very lively citrus notes, resulting in a very elegant set.

Manual harvest, reception with total destemming and crushing immediately. Fermentation between 22-26 ºC for about 7 days with gentle maceration in cement vats, maceration using the classic “delestage” technique, about 3 to 4 per fermentation, malolactic fermentation in used barrels. Aging for 14 months in 300 Lts American oak barrels with extra fine grain. Explosive aroma, very intense, wild fruits and spices with intense notes of licorice in perfect balance with discrete notes from barrel to toast and vanilla. Sweet attack in the mouth, with great volume, the vibrant notes of fruit and spices can be felt in the nose, with very voluminous and soft tannins, with a long and persistent finish. Ready to drink. Contains Sulfites.

The grapes, previously destemmed, underwent a pre-fermentative maceration at low temperatures for 12 hours. The alcoholic fermentation was done in mills, with temperature control, not exceeding 27ºC, during 10 days, with the use of robot to step. The wine aged for 18 months in second and third use French oak barrels. Deep color of violet tonally, with good concentration in the nose. Rich in aroma, with notes of ripe black fruit and spices combined with floral notes. In the mouth it looks elegant and fresh, with an excellent tannins-acidity combination, and a long, smooth and elegant finish.
