After manual harvesting, the grapes are transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once at the cellar, the boxes are unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which are transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the variety and the plot, a protocol of pumping over and deletions was carried out. After malolactic fermentation, the different components aged in 225 L oak barrels for 18 months. After bottling, the wine aged for another 12 months in the bottle. It is a ruby colored wine with deep intensity. In the aroma, it presents notes of ripe black fruit, woods and balsamic nuances characteristic of the terroir of the H.O, in perfect harmony with the spicy and complex notes of the Old Vineyards. In the mouth, it presents structuring tannins balanced by the natural freshness of the wine and in harmony with the notes of aging in barrel.

Dão wine, Casa da Passarella O Énologo - Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir - with a minimalist wine in our cellar. Vinification in a cement vat with pre- and post-fermentative maceration. Aging for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.

The white grape varieties recently introduced in the Alentejo wine estates demonstrate in this wine their oenological characteristics to produce quality wine in the region of Borba. The grapes coming from vineyards with moderate productivity allow to obtain a fresh, balanced and structured wine. Harvest was performed manually and in the morning so that the temperature of the grape at the entrance to the cellar is optimum. The grapes were transported in small quantities. After crushing and total destemming of the grapes, a slight skin maceration followed by pressing, decanting by the system of cold for 24 hours and alcoholic fermentation, 30% of the wine in French and American oak barrels, with strict temperature control at 15 ° C. Full, intense aroma of ripe tropical fruits and vanilla. Flavor velvety, with structure and freshness, citrus fruits and light spicy honey to predominate. Wine harmonious, long and of great balance. On the plateau of Alijó, Samarrinho benefits from a cool climate which gives it a very interesting aromatic profile and a lot of acidity. However, it is in the warmer years of the Douro that Samarrinho presents the best wines, proving to be a very Douro variety! After being pressed in a pneumatic press, fermentation takes place in stainless steel vats without skin contact. The aging takes place over a period of 6 months, thus preserving all the freshness and varietal character of this fantastic grape variety. A great and very fresh white Douro that at first impression has slight nuances of minerals, followed by charming notes of white fruit. A very harmonious wine, showing itself intense and delicate at the same time with a lot of freshness and excellent volume of tasting and with surprising minerality. It has a medium body and a voluminous final finish, showing very peculiar characteristics. A wine with enormous potential for bottle aging. Contains Sulfites.

It is vinified in the Quinta da Leda winery, from grapes coming from plots located in Quinta da Leda and neighboring vineyards. Grapes with balanced maturation are chosen as a consequence of a favorable vegetative cycle.
