Alexandre de Almeida innovated by combining luxury hospitality with a wine cellar and his own wine, creating the rare and historic Buçaco wines, produced at Palácio do Bussaco, in the mountains north of Coimbra.

Caementa is the wine that rescues the tradition of cement in Dão in a contemporary version. Its slow fermentation and aging in NicoVelo cement tubes resulted in a wine with pronounced, fresher and textural aromas. Made from the Tinta Roriz variety, planted at an altitude of between 400 and 500 mts, vinification in cement formats the first Taboadella Caementa Rosé in a less intrusive version, allowing for greater aromatic clarity and physical persistence without interfering with the fermentation kinetics, which enhances the genuine character of the Tinta Roriz variety and highlights the expression of this unique Taboadella terroir.

Selective manual harvest in 40 kg baskets, selection on a selection table, entry into the vat by gravity without the use of pumps. Minimum intervention winemaking. It aged for 9 months in stainless steel vats without contact with barrel and 3 months in bottle. It presents a fragile garnet-ruby color, nose with notes of wet forest, mushroom and spicy, with very soft herbal touches. In the mouth it is very fresh, very structured and of medium texture. Classic vinification in stainless steel vats with smooth skin maceration. Fermentation with controlled temperature up to 26 º C. Maceration cared for 5 days. Aged for 8 months in French oak. Clear appearance. red color with hints of garnet, reveals notes of red fruit with hints of raspberry, light blueberry, complexed with nuances of cinnamon and cloves, flanked by fresh vanilla expressions. It presents a very elegant and balanced body, with velvety and round tannins, with good expression of balsamic and pine notes. It is vinified in the Quinta da Leda winery, from grapes coming from plots located in Quinta da Leda and neighboring vineyards. Grapes with balanced maturation are chosen as a consequence of a favorable vegetative cycle. After destemming and soft crushing, the grapes are sent to stainless steel vats and/or mills, where prolonged macerations are carried out. It is intended with this technology that the constituents of quality, present in the ripe grapes, thus pass smoothly to the wine.
