Ferment in a cement mill, whole bunch with the traditional Douro tread. During fermentation, extraction is minimal, as are all interventions in this wine. It ages in a 1000 liter German oak foundre, over 50 years old, for 1 and a half years and is bottled by hand without filtering or sticking and with minimum levels of sulfites. Of dense violet color, typical of a fermentation with a lot of Touriga Franca in a wine press, the Yellow Schist is very floral on the nose, with some notes of rock rose and pink pepper. In the mouth it contrasts very fresh, black fruit of the forest and some white pepper with a mesh of firm tannins that make the finish very persistent. Contains sulfites.

Quinta de Arcossó Reserva Red is a notable example, the result of the distinct terroir of Arcossó, Vidago, in the Ribeira de Oura sub-region. Originating from an exclusive plot of 10.5 hectares, part of a 12-hectare vineyard planted in 2003, this wine reflects the excellence of viticulture in the region. Located on a slope to the south, at an altitude of 375 meters and with a slope of 20%, the granite soil gives the wine unique characteristics. Traditional winemaking in a press, with foot treading, followed by a 12-month aging period in French oak barrels, both new and used, culminates in a period of maturation in the cellar for 6 months after bottling.
This careful elaboration results in a wine of intense color and aroma, where floral and ripe fruit notes stand out, in perfect harmony with the elegance of the wood. Pretexto is a Portuguese red wine produced with grapes from different vineyards in the Dão region. These grapes came 90% from Penalva do Castelo (Jaen, Alfrocheiro and Tinta Roriz) from vineyards at an altitude of 550-620 meters in quartz and clay soils and 10% from Vila Nova de Tazem (Touriga Nacional) from vineyards in soils of granite and at an altitude of 480-550 meters. All these vineyard plots are currently being converted to organic certification. It was fermented in stainless steel tanks with 30% whole bunch, followed by a 30-day cuvaison. The final batch aged in French oak vats (5000 L) and in barrels for 11 months. Naturally stabilized. With delicate aromas and lively red fruit character, the most evident being the cherry. The mouth accompanies the fruit combined with good acidity, some carbonic notes and a mentholated and balsamic profile. Soft tannins, pleasant herbaceous from the use of the whole bunch and good length in the aftertaste. It is an elegant wine with the typical freshness of the Dão region. Contains sulfites.

Made from a “Vinha de Forcado” planted in 1932, located in Amarante, a viticulture system that grows through the trees and reaches almost 7 meters in height. The harvest is done with ladders.
After manual harvesting, with the help of ladders, and transport to the cellar in small boxes (18kg-20kg), the bunches were destemmed, bag by bag, to a small mill, trodden on foot and then fermented in an amphora with
indigenous yeasts. This was followed by light pressing and aging with the total lees in used barrels.

Bottling: July 2021 (not filtered or stabilized). Yellowish wine, with an intense aroma, with a touch of straw and critin. Vibrant wine in the mouth, with excellent acidity, the fruit on the nose goes very well in the mouth. Finishes long and persistent with mineral nuances. Contains sulfites.
Caves São João 98 Years of Story White

This wine was created with minimal intervention, in order to respect the qualitative potential of the exceptional grapes that originated it, as well as respecting the classicism of white wines from Dão and those from Caves São João, in particular. For this reason, aging on fine lees took place in wooden vases, already heavily winered, for a period of 6 months, having been bottled without stabilization, after a very coarse filtration. With a straw yellow color and a very complex aroma, with evident mineral notes (flint and flint), phosphorus, spices, dry vegetable and very faint fruity notes and dried flowers. The wood notes are perfectly integrated, being practically imperceptible. It has great freshness and gustatory volume, however it is also elegant and quite persistent, characteristics that give it excellent gastronomic aptitude and for ageing. .

From Dão, Casa da Passarella Enxertia Alfrocheiro arises from the heterogeneity of our encepting. Every year they are different in the soil-climatic conditions. From this differentiation we decided to create a wine based on the best behavior of the grape variety in the wine year. Based on this philosophy, we feel free to choose the best reflected caste each year. We inaugurated this reference with the Alfrocheiro of the year 2011. The fermentation took place in a vat of spontaneous fermentation. Stage of 12 months in barrel and 18 months in bottle. The whole process of stabilization resulted from minimalist and natural processes. Contains Sulfites.
