Manual harvest, bunch by bunch, individually selected. Fermentation in a stone mill and treading of the masses lasting between 6 to 8 days. Malolactic fermentation and 16 months aging in French and American oak barrels. Ruby red in color with aromas of red fruit matching perfectly with the touch of barrel. In the mouth, the firm tannins and fruit stand out, complementing each other in a complex and elegant structure. Contains sulfites.

Try Tapada de Coelheiros Sobreira Red, an exceptional wine that comes from the slopes of Vinha da Sobreira, meticulously cultivated with the Syrah variety since 2001. Located among cork oaks, this vineyard benefits from sandy clay soil, complemented by the northwest exposure, which gives the wine unique characteristics. The conversion to organic farming in 2017 and biodynamic farming in 2020 underlines the commitment to sustainability and soil regeneration.
Winemaking begins with the manual harvesting of the grapes, followed by a careful process of de-stemming and partial crushing. After meticulous fermentation and maceration, the wine matures for 18 months in barrel, and a further 18 in bottle, resulting in a robust structure and deep aromatic complexity.

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. Afterwards, a small part of the must, the skins and the stalk are fermented in clay pots, and another in vats. The remainder of the brand is fermented in stainless steel vats. The use of jars gives spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week pellicular maceration, followed by a 9-month aging period in French and American oak casks. Deep red color, with aromas of dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, present but soft tannins. Long finish.

The grapes harvested and transported in 22 kg boxes are subjected to rigorous sorting at the entrance to the cellar, before being destemmed, crushed and transferred to stainless steel fermentation vats where they fermented at a controlled temperature for a period of 7 days. 85% aging in stainless steel vats with controlled temperature; 15% in 225L French oak barrels for 6 months. Dark ruby color, with excellent aromatic intensity where floral notes of violet stand out and expressive aromas of wild fruits. In the mouth it starts in a captivating way, evolving into a balanced wine of excellent volume and structure, where we find smooth texture tannins, well integrated with excellent retro nasal sensations of wild fruits. A seductive wine, of great freshness that finishes persistently. Contains Sulfites.
