Mr. Amílcar chose to ferment this white wine, an Arinto from Quinta de Arcossó, directly in the Vidago region, 450 meters above sea level in Trás-os-Montes (Ribeira de Oura). He adopted a unique approach: 80% of the fermentation took place in stainless steel tanks with 'bâtonnage', while the remaining 20% was fermented in French oak barrels. After this process, this delicious Arinto was aged in bottles for 30 months.
Enhance the flavor of this white wine by decanting it for an hour before serving.
Quinta de Arcossó, located in Trás-os-Montes, is a wine project dedicated to artisanal wine production. Using a minimalist winemaking approach, inspired by ancient techniques dating back to Roman times, the farm produces distinctive wines known for their notable acidity, ripe fruit and robust tannins. These wines, aged over time, are produced in limited quantities due to the artisanal care dedicated to each bottle.

The grapes are picked by hand prior to destemming and there is an automated selection process. These are gently crushed before being transferred to the fermentation in the vats where they are inoculated with a specially selected yeast culture and fermented at 25 ° C. During fermentation, the wines are gently macerated with the ability to mature in the bottle. Post Scriptum DOC features a deep ruby color, appealing ripe plum scents. Bulky and well structured body. Manual harvesting, fermentation in mills and prolonged maceration of 4 weeks. Maloactic fermentation in barrels (Burgundy cooperatives). It presents a ruby color, intense aroma, complex, notes of ripe red fruit and blackberries, balsamic touch of the barrel. Balanced palate, very elegant, good acidity, long finish and pleasant persistence. Stage of 12 months in new French oak barrels and 6 months in bottle. Contains Sulfites.
