The vinification process begins with manual grape selection, followed by total destemming and cold skin maceration for 8 hours. Fermentation takes place in lightly toasted French oak barrels at a controlled temperature of 15ºC, and the wine matures "sur lies" for 12 months in new 500L barrels, adding complexity and elegance.
With an intense citrine color and greenish reflections, it reveals aromas of ripe peach and orange accompanied by smoky notes and a hint of wet stone on the nose. The palate is notable for its volume and balanced body, ending with a crisp freshness that promises longevity. Ideal for pairing with fatty fish, all variants of cod, grilled white meats, and soft sheep cheeses, it should be served at 12ºC.

Aging for 12 months in French oak barrels. The grapes were harvested at their optimum phenolic / aromatic ripening point. After destemming and gentle crushing, a 4-day pre-fermentative maceration was performed to increase its complexity. Fermented at 26ºC with gentle pumping over, preserving the fruit and extracting smooth tannins important for the balance of the final wine. Wine with an intense, complex and attractive aroma. A blend of aromas from the most fruity side to the most shrubby side. In the mouth it presents volume, very well integrated tannins and good acidity, which make it an extremely "greedy" wine. Filipa Pato Nossa Missão Red

Missão, is a small centennial vineyard of 0.57 hectares with pre-phylloxeric vines of over 100 years. Production is limited to only 500 bottles and 30 magnums. It is located on a gentle slope with east orientation, the soil is of limestone origin from the Lower Jurassic era, with reddish clay. The cultivation and harvesting are totally manual and the sorting of the grapes is done in the vineyard itself. A part of the grapes are destemmed, and the percentage of whole grapes depends on the conditions of each harvest. Fermentation takes place slowly for about 3 weeks, with indigenous yeasts, the flow is smooth and long. After alcoholic fermentation, the wine drains by gravity and the masses are pressed. The whole fills only a traditional 500 liter kite where it stays for 18 months in our basement. The "Missão" is a remarkable wine for its pure expression of Berry. While young, the aromas resemble violet and strawberry. After 7-9 years, the aromas become more complex with a lot of energy and concentration. The tannins, although very alive, are soft, lively acidity, long finish, irreverent and elegant. It is a wine with long aging potential. Contains Sulfites.
