At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. Afterwards, a small part of the must, the skins and the stalk are fermented in clay pots, and another in vats. The remainder of the brand is fermented in stainless steel vats. The use of jars gives spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week pellicular maceration, followed by a 9-month aging period in French and American oak casks. Deep red color, with aromas of dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, present but soft tannins. Long finish.
Encoberta Red

Encoberta is the name of a small town in Penalva do Castelo (Castendo sub-region), where this wine was made with its own grapes. Vineyards aged 28 years at an altitude of 460 m with granite and clay soils are being converted to organic certification since 2020. It ferments with indigenous yeasts in French oak vats and with 35% whole bunch followed by 30 days of cuvaison. Aged for 15 months in used French oak barrels and vats. Naturally stabilized. It is a very characteristic red from Dão, from Penalva do Castelo. A little more fruity, denser and more textured than Serra da Estrela wines, black fruit and spicy notes also in the mouth. Dry, some earthy character, and a slightly tannic finish. Contains sulfites.

The grapes are picked by hand prior to destemming and there is an automated selection process. These are gently crushed before being transferred to the fermentation in the vats where they are inoculated with a specially selected yeast culture and fermented at 25 ° C. During fermentation, the wines are gently macerated with the ability to mature in the bottle. Post Scriptum DOC features a deep ruby color, appealing ripe plum scents. Bulky and well structured body.
