This wine comes from the vineyards of Seia, vinified in cement mills with foot steps and in stainless steel tanks. It aged for 12 months in oak barrels, of which 20% new. Being Dão de terroir par excellence for the Touriga Nacional, it is on the slopes of the Serra da Estrela that this variety finds perfect maturation conditions. Beautiful violet color and exceptional aromatic complexity, with the usual floral notes, black fruits and wild berries. It is a very structured and rich wine, but with an excellent acidity that gives it minerality and nerve. It is undoubtedly our most complete and complex varietal wine, which is still taking its first steps, has a long life ahead. Contains Sulfites.

This wine is straw yellow in color, with a high intensity aroma, revealing the aromatic complexity that is due to the particular conditions of aging and to the characteristics of the Encruzado grape variety. On the nose, the superior integration of aromas from French oak stands out where it aged. In the mouth, the attack is intense, voluminous, revealing a lively but very integrated acidity. Dão wine, Casa da Passarella O Énologo - Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir - with a minimalist wine in our cellar. Vinification in a cement vat with pre- and post-fermentative maceration. Aging for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.
Quinta da Carolina Red

Careful selection of grapes in whole bunch for the cement mill where they spontaneously ferment at controlled temperature. After a maceration period of about a week, the grapes are picked and the wine continues its fermentative processes in 500 liter French and Austrian oak barrels. Aging for 24 months in French and Austrian oak barrels, followed by a year in stainless steel, where it stabilizes naturally throughout the seasons. Bottled manually, by gravity without filtering or sticking and with minimal SO2 adjustments. It is a wine with a little extracted profile, we look for the elegance and freshness that an old vineyard with exposure to the north can give us. Open ruby color, shallow, with herbal notes combined with fresh fruit on the nose, deep and persistent in the mouth, with Douro and wooden aging notes. A wine to enjoy while young, but clearly aging. Advisable for decanting. Contains Sulfites.
