In the cellar José de Sousa, some ancestral techniques of vinification are still not used, the most emblematic being the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this process, the grapes previously stamped on foot are stripped by hand on a table called a "ripening table". Then, part of the must, the films and 30% of the stench are fermented in the clay hoards. The rest is fermented in mills. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months of aging in new French oak wood. It has a red color with brownish highlights. Aroma to dates, green tea, dried figs, a little peppermint, well integrated oak wood. Fruity palate, soft, elegant, soft tannins. Long test field.

Aveleda Solos de Xisto Alvarinho White
Manual harvesting with selection of berries and cooling of the bunches. After the desired temperature, soft pressing with low pressures and fermentation in small capacity stainless steel vats at controlled temperatures. 100% stainless steel aging for 9 months. Clear citrus color to straw. Very elegant and smooth aroma. There are notes of tropical fruit, ripe grapefruit and white flowers. Tasty in the mouth with a velvety and balanced by good acidity. Reveals notes of ripe grapefruit, notes of mango and pineapple and light floral. Long, harmonious and tasty finish. Very clean wine, with aromatic intensity where tropical notes and ripe citrus are evident, making this wine very elegant but concentrated. With a long and harmonious finish. Contains sulfites.
Post Scriptum DOC Red
The grapes are picked by hand prior to destemming and there is an automated selection process. These are gently crushed before being transferred to the fermentation in the vats where they are inoculated with a specially selected yeast culture and fermented at 25 ° C. During fermentation, the wines are gently macerated with the ability to mature in the bottle. Post Scriptum DOC features a deep ruby color, appealing ripe plum scents. Bulky and well structured body. Very elegant tannins, presenting a very fresh and long-lasting finish. It is ready to drink but reveals a high potential for aging. Contains Sulfites.
Mob Lote 3 White
Fermented in small stainless steel vats and oak barrels. He spent eight months in barrel, with slight battonage. It is a wine with a beautiful golden color given by the maturation and richness of the grapes Encruzado and Bical. The subtle aromas are dominated by a complex bouquet of white fruits, herbs and minerality. In the mouth it has an opulent impact, but thanks to its great acidity it becomes very balanced and long. M.O.B. Lot 3 "winks" to the past with its complex and austere aromas that do not fit into the conventional light aromatic whites. Contains Sulfites.
