After being selected, the grapes are stalked at the entrance of the cellar, crushed and driven to stainless steel mills with robotized steps. It is at this stage that the pre-fermentative maceration is carried out at low temperatures. Subsequently the fermentation is carried out in stainless steel tanks at a maximum controlled temperature of 28ºC. Intense deep red color with violet tones. Intense, fresh and complex aroma, dominated by ripe fruits such as blackberry, plum and cassis, some floral aromas, such as violets, and tertiary aromas from its “elevage” in barrels like spices. It has firm tannins, ripe and smooth and a balanced acidity. Contains Sulfites.

After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the variety and the plot, a protocol of pumping over and deletions was carried out. After malolactic fermentation, the different components aged in 225L oak barrels for 18 months. After bottling, the wine aged for another 24 months in bottle. It is a ruby colored wine with deep intensity. In the aroma, it is very young and full of fresh fruit, concentrated blackberry, black currant, forest with balsamic and spicy nuances from the barrel. In the mouth, it presents both powerful and fine tannins, giving this wine an enormous capacity for keeping.

The grapes were harvested manually for small boxes of 20kg, with selection in the vineyard. The grapes were again selected on the carpet of choice, cooled to the entrance of the cellar and immediately pressed. Part of the resulting wort was transferred to new French oak barrels, where it completed the fermentation and where it remained about 6 months. The rest of the wine, about 3/5, fermented and staged only in stainless steel. Citrus yellow color, floral aroma with light toasted notes and perception of granite. In the mouth it is unctuous with citric notes and a lively acidity. Ends long and vibrant.
