Transport in 20 kg boxes and total destemming. Step on foot in traditional granite presses. Alcoholic fermentation in a wine press for 8 to 10 days with continuous work and controlled temperature. Quinta de Carvalhiços Reserve Red

Aged for 4 months in used French oak barrels. A wine concentrated and deep in the aroma, with a floral edge of great intensity, forest, pine forest and wild berries. Dense mouth with good structure, with present and appealing tannins with discreet vanilla finish. Alcoholic fermentation was carried out in stainless steel with temperature control at 27°C, with grapes that had been destemmed.

50% fermented in used 350 liter French oak barrels and the rest in stainless steel vats at a controlled temperature of 16ºC. Aging on fermentation lees for 6 months, followed by 3 months of rest in bottle before being marketed. With a strong connection to the terroir of Monção, Alvarinho expresses itself in Vicentino respecting its origin in an elegant combination of aromas that characterize it. This Encruzado comes from a plot at 500 meters altitude of granitic soil with lines of clay. After pre-fermentation skin contact and static decantation, fermentation took place in barrels (500/600L) with 5 years of use. The aging was very long (late release) in barrels without battonage or sulfur addition. Direct bottling without filtering or gluing. Contains sulfites.

Grapes reception in the cellar in 24kg boxes. Manual selection followed by destemming, skin maceration and gentle pneumatic pressing. The must ferments in stainless steel vats at low temperature. Stabilization and light filtration. Special care was taken in the winemaking, minimizing any intervention, with the aim of producing a wine that expresses well the particularities of the grapes and terroir. Produced at Quinta de Santa Teresa, with grapes from the P70 plot, this Monólogo is a monovarieous wine with an aromatic profile, long in the mouth and persistent. These characteristics, typical of the variety, have been appreciated since ancient Greece, where Malvasia Fina comes from. On the nose we find freshness and smoky aromas, quartz and nutmeg. On the palate it is pleasant, balanced and unctuous, showing notes of granitic influence, spices and pear. Contains sulfites.
