Organic wine: Manual harvest for small 15 kg perforated boxes, fermentation with cold technology, in a reductive environment, with controlled temperature around 16ºC. The grapes are pressed without crushing and without destemming under an inert atmosphere in order to preserve all the aromatic potential of the grapes. A great effort is made to ensure that all pre-fermentation operations are carried out with the utmost rigor, being responsible for the intrinsic quality of the future wine. The entire wine is fermented in used French oak and remains there after a small racking over fine lees with periodic “battonage” stirring until the final blend is made. 6 months in French oak barrels, fermentation and agitation stage with fine lees, coming from the very sandy Upper Douro granitic soil at an average altitude of 575 meters. It has a citrus and mineral aroma, grapefruit notes, discrete exotic fruits and country flowers. Very persistent and fresh mouth with very lively citrus notes, resulting in a very elegant set.

Clear / bright appearance, with a greenish citrus color with medium intensity.
On the nose it presents notes of white flower (marigold), light citrus (very ripe lemon) and some wax, but discreet.
Very evident notes of minerality on the nose. In the mouth it is dry and round with an interesting myth greasiness.
Medium / high acidity, very elegant with evident notes of wax and some smoked. Enough mineral, makes it have
in the mouth a “crunchy” character. Very long aftertaste with notes of ripe lemon peel and some

Quinta do Vallado Reserva Field Blend Magnum Red

Some of the grapes were subjected to the traditional process of milling, while the rest were vinified in five-ton stainless steel tanks with controlled temperature and robotic reassembly. After the malolactic fermentation, all the wines were transferred to French Allier oak barrels where they remained for 18 months. 60% staged in new barrels, 40% in used barrels. Quinta do Vallado Reserva Field Blend has a very concentrated aroma, with balsamic notes of oak, fig and blackberry, tobacco.
Flavor very full-bodied, fleshy with ripe and round tannins. The finish is elegant, mineral, very persistent and complex. Contains Sulfites.

Aged for 12 months in French oak barrels. Selection of grapes in the cut and transport in boxes directly to the cellar. Vinification with crushing and total destemming. Fermentation in an open press with controlled temperature. Intense red color and very balanced nose and well filled with notes of wild fruits and cherries, spices and a light floral touch, on a background where the elegance of vanilla and barrel notes is evident, in the mouth it reveals a voluminous and enveloping wine , where the fruit and the spices reveal a beautiful integration and the tannins demonstrate a good firmness, showing signs of potential in the bottle, a long and persistent finish. In 2015 we enjoyed long and slow maturations that our older strains and our best plots have taken advantage of to provide grapes with an exemplary balance between acidity and tannins. The two grape varieties that benefited most with the exceptional goodness of nature were Syrah and Alicante Bouschet, providing grapes in perfect maturity. With raw material so good we prefer to work them little, letting the grapes speak for themselves. That's why we did little more than one walk on our wineries, according to the most traditional methods of the region, followed by a stage in new barrels and barrels of second year of French oak, letting the wine express itself in the purest form .
Very fleshy red color. Tense and closed, concentrated and powerful, floral and fruity, it ends with some earthy notes that add complexity. Silky and velvety in texture, it is an intense and structured red, vigorous but not aggressive, complex and elegant, fresh finish and great guarding potential.
