After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to a pneumatic press. After clarifying the must, alcoholic fermentation began in stainless steel tanks at low temperatures of around 14ºC, in order to preserve all the varietal character of each variety. Alcoholic fermentation took place for approximately 15 days, where after resting, the different components aged for 8 months in stainless steel. It is a wine with a citrine color and medium intensity. In the aroma, it presents notes of fresh fruit with a predominance of citrus fruit, white stone fruit and light tropical. In the mouth, it is intense with natural freshness balancing the whole.

Natural fermentation with indigenous yeasts in cement vats without temperature control, followed by malolactic fermentation in barrels. Aging for 18 months in French oak barrels, followed by aging in bottle for 36 months. It is the reference wine of the estate, since the first harvest was bottled in 1949, and reflects the unique temperament of the winery. Mouchão wine is born mainly from the best grapes of Alicante Bouschet, while the rest is found in the selection of other varieties such as Habitué Trincadeira, the famous Vinha dos Carapetos, and Aragonês, which is also sometimes invited. This happy combination results in a wine full of personality, with fragrant aroma, fresh and very elegant. It is a wine whose flavor expresses its slow maturation and which strongly reflects its origin and respect for tradition. After harvesting by hand, the grapes follow in small baskets to the cellar, where, after an experienced walk on stone wineries and fermentation, the Mouchão rests in barrels of Portuguese oak, macacaúba and mahogany for at least three years. It grows in all its intensity, character and robustness, but will still have to mature in bottle for another two years. Mouchão wine has a deep, concentrated color, and has a spicy character. Its unique tannin structure enhances a long bottle aging, which can improve significantly on guard for two decades, or even longer. Contains Sulfites.
Quinta de Chocapalha Red

The grapes, previously destemmed, underwent a pre-fermentative maceration at low temperatures for 12 hours. The alcoholic fermentation was done in mills, with temperature control, not exceeding 27ºC, during 10 days, with the use of robot to step. The wine aged for 18 months in second and third use French oak barrels. Deep color of violet tonally, with good concentration in the nose. Rich in aroma, with notes of ripe black fruit and spices combined with floral notes. In the mouth it looks elegant and fresh, with an excellent tannins-acidity combination, and a long, smooth and elegant finish.
