The must, clarified by the cold, fermented slowly for approximately 2 weeks in stainless steel vats, with controlled temperature. Coming from the 28-55 year old Texture vineyards in Vila Nova de Tazem, in the Serra da Estrela sub-region, at an altitude of 480-550 m, on granitic soils. The tear must naturally fermented in new French oak (70%) and foudre (30%) barrels. Aged for 11 months “sur lie” without batonnage, followed by 10 months in stainless steel tanks.
