Founded in 1920 by the brothers José, Manuel and Albano Costa, Caves São João is a family business that was originally dedicated to the marketing of fine Douro wines and liqueurs. Today, the oldest family-run wine company still operating in the municipality of Anadia, in the 1930s, it passed the ban on the production of Porto wines outside Vila Nova de Gaia, to sell Bairrada table wines. At the end of the 50’s, one of the most famous wine brands in the Bairrada region – the “Frei João” – was born and, a little later, the “Porta dos Cavaleiros” brand from the Dão region. Selective manual harvest in 25kg buckets. Gentle pressing of the whole bunch, with decantation after 12 hours of sedimentation. The must results from the total pressing of grapes from a single plot. Fermented by indigenous yeasts with temperature control and aged for 6 months on lees in a horizontal stainless steel tank. Complex aroma combining citrus fruits, with a tropical touch and hints of sea air. In the mouth it is unctuous, persistent, very fresh and saline.

Mechanical harvest overnight. De-stem and light crushing, followed by thermal shock to 10ºC through a mass exchanger. Vacuum pressing, followed by cold decantation for 48h. Fermentation of each variety individually in stainless steel tanks with controlled temperature. Citrus color with greenish hints. Aroma of tropical fruit, fresh and floral. In the mouth it is fruity, has good acidity and a refreshing finish. Contains sulfites.

The grapes, from previously selected vines and in general from vines over 30 years old, follow a strict control of maturation to determine the optimum height of manual harvesting. At the cellar, the grapes arrived in optimum conditions and the partial destemming and crushing of the grapes began, followed by fermentation and a prolonged maceration of 10 to 12 days, to extract the best aromas and all the complexity of the fruit. This was followed by malolactic fermentation, partly in stainless steel tanks and partly in wooden barrels. For greater complexity, structure and richness, the final blend selected aged 12 months in 2nd and 3rd year barrels of French and American oak, and 6 months in the bottle for final refinement. Clear appearance, deep garnet color. Rich and full aroma, showing aromas of jam, jam and cocoa. Soft, full-bodied and complex flavor, highlighted by notes of very ripe black fruits and robust, persistent tannins, which guarantee longevity. Contains sulfites.
