At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. Afterwards, a small part of the must, the skins and the stalk are fermented in clay pots, and another in vats. The remainder of the brand is fermented in stainless steel vats. The use of jars gives spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week pellicular maceration, followed by a 9-month aging period in French and American oak casks. Deep red color, with aromas of dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, present but soft tannins. Long finish.
Vicentino Gama Nascente Sauvignon Blanc White

Planted in clayey-schist and sandy loam soils, with low yield potential, the Vicentino grape varieties boast their best attributes. The low productivity imposed by the land will act as a stimulus to the quality of the grapes that are formed, promoting an ideal concentration of organic acids, sugars and phenolic compounds. Achieving this balance between quantity and quality, together with a mild climate, makes it possible to obtain a raw material of excellence. Fermentation in stainless steel vats at a controlled temperature of 14ºC. Aging on fermentation lees for 6 months, followed by 3 months of rest in bottle before being marketed. The wine that most reflects the perfect symbiosis between the Atlantic, the soils and the vineyards is Vicentino Sauvignon Blanc. In this white, the proximity to the sea is reflected in a more vegetal profile, associated with the typical characteristics of the variety, showing light notes of tropical fruits balanced in the mouth by a fresh acidity. These sensations persist on the palate, in a smooth and enveloping taste. Contains sulfites.

Light wine, with an intense garnet color, with complex nuances of ripe red fruits, wild fruit compotes, toasted notes and floral nuances. Chryseia was produced from the best grapes extracted from the two vineyards of the Douro Valley of Prats & Symington, Quinta de Roriz and Quinta da Perdiz. Another property, Quinta da Vila Velha, which is privately owned by a member of the Symington family, has also contributed some of its finest grapes, as it has in all Chryseia harvests. It was aged in French oak barrels of 400 Liters for 15 months. The grapes were harvested in excellent condition, resulting in a very fine Chryseia. Contains Sulfites.
