Mechanical harvest at night. De-stem and light crushing, followed by thermal shock to 16ºC through a mass exchanger. Cold pre-fermentation maceration for 48h. Fermentation in conical stainless steel vats at controlled temperature. Finished with a partial stage of the blend in used 300L and 500L French oak barrels for nine months. Intense and concentrated ruby color. Aroma dominated by fresh wild fruit, perfectly integrated with the toasted and spicy notes from aging in barrels. In the mouth it has body and volume, a lot of enveloping fruit and a persistent finish. Contains sulfites.

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of the mulch in the fermentation of the grapes. The essence of woodcarving winemaking has changed little in more than two thousand years. In this process, the white grapes are slightly crushed by foot and manually destemmed on a ripanço table. Fermentation takes place, without stems, in pots with an average capacity of 1,600 liters at a temperature of around 28ºC, being controlled by watering the pots 4 times a day. Fermentation takes approximately 8 days, leaving the wine in contact with the masses. Aged in amphorae for a period of 4 to 10 months, depending on the vintage. During this period, a film of oil is placed to prevent oxidation. Amber color, aroma of dried fruits, especially hazelnut. Spices, evolved, white pepper, ripe kiwi, bread, liqueur, hay. Elegant, complex palate, good acidity with a dry finish. Long and persistent finish. Contains sulfites.

This wine expresses the personality of the terroir od Dão wines being elaborated from the Alfrocheiro, Jaen, Tinta Roriz and Touriga Nacional varieties, produced and vinified at Quinta do Soito. Demonstrates a red with bricky nuances. It has a delicate aroma with the expression of notes of very ripe red fruits, cassis and blackberry, married with a light touch of black pepper, cocoa and vanilla. It reveals a well structured body with firm tannins, good mouth volume, high refinement and persistence. Contains Sulfites.

After transport to Quinta de Nápoles, the grapes were carefully destemmed to a stainless steel vat where they fermented at a controlled temperature for about a week. Part of the batch is stacked in French oak barrels while the rest is kept in stainless steel for about 6 months. Medium brick color wine with a magnificent, fresh, clean and precise aroma of dark cherries, floral suggestions and a rustic and balsamic profile of spices. On the palate, it is more robust than the previous year. with a markedly rustic character. Once again, an excellent wine, balanced and elegant, presenting the simple style (uncomplicated).
