After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the variety and the plot, a protocol of pumping over and deletions was carried out. After malolactic fermentation, the different components aged in 225L oak barrels for 18 months. After bottling, the wine aged for another 12 months in the bottle. It is a ruby colored wine with deep intensity. In the aroma, it is very complex, between notes of wild fruit, “sous-bois”, black fruit and balsamic freshness. In the mouth, it presents very fine and polished tannins that provide structure and finesse at the same time.
Montes Claros Garrafeira Red

Montes Claros with the designation “Garrafeira” was elaborated from a preview of old vineyards installed in shale soils, with strict control of grape production per hectare and monitoring of the evolution of maturation in each caste and specific field. This process involved, in particular, the associated winemakers, who were extremely cared for for the production of extra quality grapes. Upon arrival at the cellar the grapes were smoothly crushed with total disgust, followed by the process of alcoholic fermentation in stainless steel, with moderate mechanics, ending in maceration for 10 days, under temperature control at 24ºC. Malolactic fermentation occurred in 1st use of 1st use of French, American and Brown Oak, which followed a 12 -month internship in the same barrels. After slight filtration, the traffic jam and a final stage of 30 months in a bottle occurred. Clear appearance and color grenade with depth. Good aromatic intensity, highlighting the notes of red fruits in jam, coffee, chocolate and spices. Soft flavor, with fruity freshness, excellent structure, slight expert and toasted astringency, with wild but soft and full -bodied tannins. Very prolonged fat end, with balance, elegance and persistence.
Terras de Santo António Alfrocheiro Red

Made exclusively with Alfrocheiro grapes from vineyards approximately 40 years old, Terras de Stº António Alfrocheiro has a ruby red color. These wines associate their quality with the name of the Carthusian monks who, since 1598, lead a solitary prayer life in the Monastery of Santa Maria Scala Coeli. Produced from the carefully selected vine varieties, Alicante Bouschet eTincadeira, planted in the older vineyards of the Eugénio de Almeida Foundation. When the grapes reach the ideal stage of maturation, they are harvested and transported to the winery, where the technological process begins with total destemming and slight crushing. The grapes are then fermented separately in stainless steel vats and French oak vats, at a temperature of 27 ° C, followed by 15 day maceration. This wine aged for 15 months in new French oak barrels and 12 months in the bottle. Contains Sulfites.
