Manual harvest in 18Kg boxes, careful selection of the best grapes in the vineyard. The grapes were completely destemmed in small stainless steel vats, where they were macerated for 24 hours at low temperature, before starting alcoholic fermentation, with indigenous yeasts and controlled temperature. Alcoholic fermentation took place in stainless steel vats, with gentle mechanical treading for good color and aroma extraction. After fermentation, it was transferred to second year French oak barrels, where it remained for 12 months, completing the malolactic fermentation here. Intense ruby color, notes of vanilla, cocoa and chocolate. In the mouth it is balanced and fresh, with present tannins and a long and soft finish. It is an elegant and harmonious wine, it is focused. Spice notes like white pepper, cinnamon, with more complex and more rustic aromas.

Manual Harvest. Total destemming. Skin maceration for 24 hours and fermentation in stainless steel tanks at temperatures around 21ºC. After fermentation, the wine aged in a cement tank, reminiscent of the old days of Carlos Lucas's enology. Times when cement was traditionally used. Medium concentration ruby color. Aroma of wild berries and some spices. A very fresh and young wine. It still maintains a freshness and a young aromatic component. In the mouth rustic and with an excellent acidity. Grafting is born from the heterogeneity of the concept, since every year is different in edaphoclimatic conditions. From this differentiation, a wine was created based on the best behavior of the grape variety in the wine year. In the case of Casa da Passarella Enxertia Jaen, fermentation took place in a cement vat with spontaneous fermentation. 12 months in barrel and 18 months in bottle. The entire stabilization process resulted from mininmalist and natural processes. It is an opaque red wine, spicy notes of black pepper with vegetables. Poeirinho Garrafeira Red

It comes from several plots of old vines, some of which are centenary. Part of the wine was vinified in an open press, and another part in stainless steel vats, where it fermented and macerated for 4 weeks. The malolactic occurred in used 2500L vats, where it aged for 48 months. It was bottled without filtration. Shows a violet-toned color. Nose of enormous complexity, very expressive in the notes of red fruits, some spices and with a very fresh floral side. The purity of aromas and its enormous freshness are impressive. The limestone terroir vibrates in the aroma and enhances the elegance and finesse of the Baga variety. In the mouth, it is very fine, complex and extremely precise. Very polished and with excellent acidity, it shows very delicate tannins. Full of character, this Garrafeira has a fantastic balance. Refreshing but very long and thin aftertaste, it grows as you taste it. Elegant yet deep, Garrafeira will age very well in the bottle. Contains sulfites.
