After the desired temperature, soft pressing with low pressures and fermentation in small capacity stainless steel vats at controlled temperatures. 100% stainless steel aging for 9 months. Clear citrus color to straw. Exuberant aroma with citrus and tropical notes in evidence. Notes of grapefruit and white stone fruits. Fresh flavor with a vibrant, intense and full-bodied acidity. Reveals aromas of ripe grapefruit, some tropical fruit and peach. Grafting is born from the heterogeneity of the concept, since every year is different in edaphoclimatic conditions. From this differentiation, a wine was created based on the best behavior of the grape variety in the wine year. In the case of Casa da Passarella Enxertia Jaen, fermentation took place in a cement vat with spontaneous fermentation. 12 months in barrel and 18 months in bottle. The entire stabilization process resulted from mininmalist and natural processes. It is an opaque red wine, spicy notes of black pepper with vegetables. It presents a great balance with easy tannins of great smoothness. Long aftertaste. Contains sulfites.
