With grapes from the most typical Alentejo grape varieties produced in the sub-region of Borba, the label Cortiça wine was produced, a true ex-libris from the Adega de Borba. Coming from old vines, the grapes had a strict control in the evolution of the maturation, having been harvested in small quantities. In the Cellar, after the destemming and soft crushing of the grape, the alcoholic fermentation began, which lasted for about 10-15 days with the temperature controlled at 24ºC, for greater extraction of the aromas and fruity flavors of the grape. In order to increase the polyphenolic complexity, the tannins and the structure of the wine, it remained in the vat in a post-fermentative maceration process. The malolactic fermentation occurred later in stainless steel containers. To enhance and elevate its organoleptic characteristics, the wine aged 12 months in 3rd and 4th year barrels, French oak and exotic wood barrels. followed by a six-month bottling stage in the basement. Aroma fine and elegant, suggesting black fruits, compote and white chocolate. Contains Sulfites.

Arrivals to the Quinta da Leda ans Quinta do Seixo winery, after soft crushing and total destemming, the grapes were fermented in temperature controlled stainless steel tanks. During this fermentation, it was reassembled by pump and step by robot, performing a long maceration to achieve a balanced aromatic and polyphenolic extraction. It is intended with this technology that the constituents of the quality present in the ripe grapes thus pass smoothly to the wine. At the end, and at the moment "required" by each variiey/batch, the wine was put in the vat and its masses pressed, the wine being the result of the pressing kept aside from the tear. It has a deep ruby coloc with an intense and complex aroma. Highlights are aromas of ripe red fruits and floral aromas, violet and lavender. Reveals notes of spices like pepper and cinnamon, as well as balsamic aromas the resin. It also has a very good quality integrated wood.

The grapes are picked by hand prior to destemming and there is an automated selection process. Sharing moments, ideas and experiences with other winemakers or people related to wine is something that Susana Esteban always liked and encouraged. And for this reason he decided to create the Sidecar brand. Every year the producer and winemaker will challenge a friend to make a wine in his cellar in Mora. They will decide how to interpret the fantastic vineyards of the region and as the project's mentor says, they will be driving the bike! For the second edition of the Sidecar invited two friends, the oenologist Filipa Pato and the sommelier William Wouters. An interesting trio, and that above all, makes sense! It decided to join a field blend of traditional varieties of Serra de São Mamede, a cooler and higher altitude zone of the Alentejo, with a Berry of a century-old vineyard of Bairrada, zone influenced by the Atlantic. The wines fermented and stamped both in amphora.
