Total desengace, soft skin maceration, alcoholic fermentation at 26ºC. 2 months of maceration after fermentation and 6 months of batonnage in fine lees. Stage 18 months in stainless and 3 months in bottle. It is ideal to accompany delicate cheeses based on fish, white and red meats of moderate confection of Mediterranean, Chinese, Indian and African cuisine. Contains Sulfites.

Mechanical and night harvest. The process goes from caste to caste. Antão Vaz grapes are destemmed, lightly pressed in a vacuum. After defecation, they ferment at a controlled temperature between 10o and 12oC. Arinto grapes are destemmed and sent, without crushing, to “vinimatics”, for skin maceration between 6 and 10 hours. Subsequently, they are pressed and sent to the cold room. Wine of citrus tones, with notes of tropical fruits, light quince jam and mineral notes. Elegant in the mouth, it shows good acidity and a striking structure, which prolongs the tasting. Contains sulfites.

Sharing moments, ideas and experiences with other winemakers or people related to wine is something that Susana Esteban always liked and encouraged. And for this reason he decided to create the Sidecar brand. Every year the producer and winemaker will challenge a friend to make a wine in his cellar in Mora. They will decide how to interpret the fantastic vineyards of the region and as the project's mentor says, they will be driving the bike! For the second edition of the Sidecar invited two friends, the oenologist Filipa Pato and the sommelier William Wouters. An interesting trio, and that above all, makes sense! It decided to join a field blend of traditional varieties of Serra de São Mamede, a cooler and higher altitude zone of the Alentejo, with a Berry of a century-old vineyard of Bairrada, zone influenced by the Atlantic. The wines fermented and stamped both in amphora.
