This wine comes from the exclusive Quinta dos Pasmados region, in Azeitão. In 1998, the landmark decision was made to replace the Chardonnay grape variety with Viosinho, with the origin of Arinto and Esgana also being changed from clay-limestone soils to sandy soils. In 2005, with the aim of improving the complexity of the wine, the Viognier variety, cultivated in our vineyards for over 40 years, was added. Around 1999, winemaker Domingos Soares Franco came across several bottles of Pasmados White from 1963 in the cellars. Displaying a yellowish tone that testified to its natural aging, the aroma revealed evolution, remaining fine, velvety and subtly fruity. On the palate, it stands out for its pleasantness and surprisingly well structured, presenting exceptional quality and notable acidity. Inspired by this discovery, Domingos Soares Franco then decided to test the production of a Pasmados with aging potential, using the 1963 as a reference. The best vintages are stored in the cellar, small quantities of bottles being sold again years later under the almost forgotten name of Garrafeira. Also rescuing Garrafeira's classification, Pasmados Garrafeira was born. Contains sulfites.

The grapes were harvested manually, gently de-stemmed and pressed after careful sorting in the cellar. Fermentation took place in stainless steel vats and used 400L and 500L oak barrels. Aging with fine lees and bâtonnage. Elegant orange and lemon peel, white flowers and peach aromas. The presence of barrel aging is discreet. In the mouth it is creamy, with crisp acidity and minerality giving a long finish.

The grapes were harvested manually into 25Kg boxes and immediately transported to the cellar where they were stored in the cold chamber for 24 hours. This was followed by grape selection and pneumatic pressing and decanting. The alcoholic fermentation started in a stainless steel tank with selected yeasts. 70% of the must was transferred to 500L barrels and the wine was kept in contact with the fine lees with periodic battonage. Aging for 8 months in barrels with battonage. Complex nose where the tropical fruit from the Roupeiro stands out, combined with notes of grapefruit and the freshness of the Arinto lime peel. The palate is dominated by creaminess and unctuousness. Long and persistent finish. Contains sulfites.

Quinta do Fojo, located on the picturesque left bank of the Pinhão Valley, is the birthplace of the exceptional Quinta do Fojo Red 2016. This wine is produced exclusively from the property's vineyards, which extend over 4 hectares planted in 1986, with a mix of grape varieties where Tinta Roriz predominates.
The Mediterranean climate, combined with the schist soil and the altitude between 250m and 370m, provides the ideal conditions for the production of superior quality wine. Vinification is carried out in fermentation vats, followed by a 19-month aging period in large French oak vats, giving Quinta do Fojo Red 2016 a unique complexity and elegance.
