Encoberta is the name of a small town in Penalva do Castelo (Castendo sub-region), where this wine was made with its own grapes. Vineyards aged 28 years at an altitude of 460 m with granite and clay soils are being converted to organic certification since 2020. It ferments with indigenous yeasts in French oak vats and with 35% whole bunch followed by 30 days of cuvaison. Aged for 15 months in used French oak barrels and vats. Naturally stabilized. It is a very characteristic red from Dão, from Penalva do Castelo. A little more fruity, denser and more textured than Serra da Estrela wines, black fruit and spicy notes also in the mouth. Dry, some earthy character, and a slightly tannic finish. Contains sulfites.

After transport to Quinta de Nápoles, the grapes were carefully destemmed to a stainless steel vat where they fermented at a controlled temperature for about a week. Part of the batch is stacked in French oak barrels while the rest is kept in stainless steel for about 6 months. Medium brick color wine with a magnificent, fresh, clean and precise aroma of dark cherries, floral suggestions and a rustic and balsamic profile of spices. On the palate, it is more robust than the previous year. with a markedly rustic character. Once again, an excellent wine, balanced and elegant, presenting the simple style (uncomplicated). The grapes were harvested manually and transported to the winery where they were de-stemmed. Alcoholic fermentation took place in a stainless steel tank at 26–27°C. Once finished, we kept the wine in post-fermentation maceration for 5 days. Malolactic fermentation occurred naturally in a stainless steel tank and was then transferred to barrels where it remained for 18 months. Aged for 18 months in French Oak barrels and 36 months in bottle. Powerful nose with notes of black fruit wrapped in spices and tobacco. In the mouth, the intensity of the freshness of the Cabernet Sauvignon stands out, followed by the creamy texture of the Alicante Bouschet, which leads us to an elegant and persistent finish. Contains sulfites.
