Grapes harvested by hand in small boxes and transported to the winery located on the farm itself, the transportation time being very short. Total destemming. Very short skin maceration. Long fermentation at low temperature: 20 ° C. Total malolactic fermentation. Aging in stainless steel for 9 months followed by aging in bottle for 6 months. Young wine with a bright ruby color. Aromas of ripe wild fruits with nuances of cherry and black pepper. Fine and velvety tannins that harmoniously contrast with a well-creased and fresh acidity. It finishes long, soft and full of black fruit. Contains Sulfites.

This wine comes from the exclusive Quinta dos Pasmados region, in Azeitão. In 1998, the landmark decision was made to replace the Chardonnay grape variety with Viosinho, with the origin of Arinto and Esgana also being changed from clay-limestone soils to sandy soils. In 2005, with the aim of improving the complexity of the wine, the Viognier variety, cultivated in our vineyards for over 40 years, was added. Around 1999, winemaker Domingos Soares Franco came across several bottles of Pasmados White from 1963 in the cellars. Displaying a yellowish tone that testified to its natural aging, the aroma revealed evolution, remaining fine, velvety and subtly fruity. On the palate, it stands out for its pleasantness and surprisingly well structured, presenting exceptional quality and notable acidity. Inspired by this discovery, Domingos Soares Franco then decided to test the production of a Pasmados with aging potential, using the 1963 as a reference. The best vintages are stored in the cellar, small quantities of bottles being sold again years later under the almost forgotten name of Garrafeira. Also rescuing Garrafeira's classification, Pasmados Garrafeira was born. Contains sulfites.

The grapes were vinified with total destemming, soft crushing, followed by a period of clarification for 48 hours depending on the state of maturity. The alcoholic fermentation took place at temperatures between 12º and 16º for a long period, with the wines aging in stainless steel on fine sludge until bottling. This rosé has a complex aroma that gives it a truly gourmet character and allows it to accompany, in general, all Mediterranean cuisine. It is fresh, with red fruits and elegant floral notes typical of the variety. The flavor is prolonged, fresh and rich, with balanced acidity. Contains sulfites.
