These wines associate their quality with the name of the Carthusian monks who, since 1598, lead a solitary prayer life in the Monastery of Santa Maria Scala Coeli. Beginning at the end of August, this harvest was the earliest ever harvested in Soalheiro, but it demonstrated an exceptional balance between the fruit and the acidity of the Alvarinhos of the unique terroir of Monção and Melgaço. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. The bottling takes place after the stabilization of the wine, followed by a bottle stage.
