Grapes harvested manually in small boxes and transported to the winery in a short time. Pelicular maceration followed by fermentation with the films for a few hours. Fermentation ends in used 400 liter French oak barrels. In the same barrels it undergoes bâtonnage for 9 months on total lees. Ages 12 months in bottle. Strong intensity of the varietal aromas of the variety where pineapple and grapefruit stand out. On the palate, full bodied showing elegantly ripe tannins. Strong concentration of fruit, namely grapefruit, lemon and pear with resinous nuances. Ends long and dry with noble bitters typical of the variety. Contains Sulfites.

Pequenos Rebentos Atlântico Red

Made from 80-year-old vines located in Barcelos, as well as from Ponte de Lima and Melgaço vineyards, the healthiest and most phenolically mature bunches were selected. Mainly made with Cainho Tinto, Pedral and Alvarelhão, the intention was to create a fresh and elegant red wine, also starting from the color. It is not necessarily a “green red”, but a red made in the Vinho Verde Region. An elegant wine from the light color, delicate with some fresh fruit in the aroma and tense in the mouth, with a long finish.
After manual harvesting, and transport to the cellar in small boxes (18kg-20kg), the bunches were destemmed and the grapes were macerated for 24 hours, as soon as spontaneous fermentation started, they were pressed and finished fermenting in used barrels. He also made the malolactic in barrels with total lees.
Aged for 8 months in used barrels. It was bottled in June 2021 (not strained, not filtered, not stabilized). Contains sulfites.
Casa da Passarellla O Enólogo – Vinhas Velhas 3x Red

Dão wine, Casa da Passarella O Énologo - Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir - with a minimalist wine in our cellar. Vinification in a cement vat with pre- and post-fermentative maceration. Aging for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.

Grapes harvested manually in small boxes and transported to the winery in a short time. Very smooth pressing of whole destemmed grapes. Fermentation in stainless steel vats followed by aging in used 225 liter French oak barrels for 24 months and minimum aging of 12 months in bottle. Open ruby color. Intense aromas of ripe red fruits wrapped in fine aromas of smoke, toast and cedar. On the palate it is dry, with a well-marked acidity. High concentration of red fruits and well balanced jam with mineral flavors such as leather and earth. Ends long, silky and very mineral. Contains Sulfites.

Manual harvesting. Harvest organized by parcels of vines to ensure harvest at the right time. Transport in small boxes to avoid crushing. Cold skin maceration. Fermentation with features to smooth manual overdrive daily. Post-fermentative maceration. Stage in French oak casks for 17 months. Without stabilization or filtration (tank can form in the bottle). Dark ruby color and intense. Expressive and complex aroma. With lots of ripe red fruit, hawthorn, cedar and full of spices. In the mouth has a silky, elegant and very balanced attack. Manual harvest, selection table, pneumatic pressing, alcoholic fermentation with controlled temperatures (12º to 14ºC). Stage in stainless steel vats on fine lees. Yellow citrus color, intense and fresh aroma dominated by citrus fruits, tropical fruits and white pulp fruits. In the mouth stands out its acidity that together with its volume and texture give it a long and refreshing finish. Contains Sulfites.
