A touch of well-integrated toasty oak merges with layers of savory texture, leading into a long and elegant finish. Very slow pressing to respect the fruit. The juices from the last pressing are not retained. No artificial yeasts or enzymes are used. Part of the wine ages in 500 liter oak barrels and the other part in stainless steel vats for 6 to 8 months. Throughout the aging process, decisions are made only after careful evaluation of the tasting. The data obtained are completed through technical analysis. As with all other Joseph Drouhin wines, absolute priority is given to the true expression of the terroir and character of the vintage. The color is clear and bright. It presents mineral notes with white flower notes. Precise on the palate and prolonged aftertaste. Shows incredible purity. Contains sulfites.

After harvesting, the free juice was cooled for 48-72 hours prior to storage. The fermentation was carried out mainly in stainless steel tanks with a mixture of cultured yeast and wild yeast. Approximately 3% of the blend was fermented at the highest temperature in old French oak barrels and large format vats. As usual, our Sauvignon was strictly mixed, including only the strongest batches. A vibrant blend of kaffir lemon, lemon zest and aromatic nectarine blend with the brilliant scent of orange blossom. Filled with ripe citrus and flavors of stone fruits framed by an elegant and succulent acidic architecture. Contains Sulfites.
