Explore the Plantation Fiji Vintage 2004, a distillation masterpiece from Alexandre Gabriel, whose life mission is to uncover the richest rum terroirs from the Caribbean to the vast South Pacific. In collaboration with Liam Costello, Master Distiller at Rum Co. of Fiji, they meticulously selected 18 casks of 2004 vintage rum, distilled in a column still and filtered through coconut carbon. This rum aged for 17 years under the tropical climate before crossing two oceans for an additional four years of aging in Ferrand Cognac casks in southwestern France.
This rum stands out for its robust structure and a subtle hint of smoke, providing an intense experience. On the nose, it unfolds with vibrant notes of coffee, vanilla, and fudge, complemented by fruity and spicy undertones, enriched with touches of citrus peel and tobacco.

Made from the 2003 harvest, this rum is aged in oak barrels for at least 11 years. Each bottle comes from a single barrel selected by the Cellar Master. A rich rum with delicate and charming aromas. A tribute to the character created by Charles Dickens in Pickwick Papers, the reverend Stiggins, whose favorite drink was "pineapple rum". Victoria pineapple peels are infused into the Plantation 3 Stars rum, which is then distilled. Separately, the pineapple fruit is infused into the Plantation Original Dark rum. The infusion of spirits and fruit is finally combined, creating a rich and delicious bouquet of pineapple, accentuated by notes of smoke and cloves.

Bayou Select

Described as 'the rum for bourbon lovers', Bayou Select is a distilled copper pot from Louisiana's sugarcane, aged in the Solera method for up to three years. The result is a creamy rum with a bourbon-esque character, accompanied by cinnamon and maple notes. The Solera method involves a pyramid of stacked barrels. The oldest liquid is in the bottom layer of the barrels, the youngest at the top. When a lot is harvested, it is filled only by a part of the bottom layer, and these barrels are covered with rum from the layer that is on them. This second layer is, in turn, complemented with the contents of the third layer and so on. This process is a way to naturally mix spirits for consistent taste and quality.
