This apple distillate serves as the basis for the distillation of the other botanicals used in William Chase gin such as juniper, coriander, angelica, licorice, lily, orange and lemon peel. This distillation is done in a small alembic (affectionately called “Gina”) and bottled in 48% ABV. In the nose has a strong juniper presence, complemented by citrus. On the palate, the juniper dominates once again, before taking on a more citrusy flavor, with coriander, angelica and licorice all contributing to a spicy and long finish. The apple base is also noticeable when tasted pure. A very balanced gin that manages to have a personality of its own.

This gin is known for its taste and creaminess. The plants used in its distillation are of Japanese origin, such as cherry blossom and lemon yuzu - a citrus fruit flavored with orange and mandarin and which was the inspiration for the name "Jinzu". The recommendation of the breeder: 50 ml Jinzu, 10 ml Vermouth dry, 5 ml Umeshu (Japanese liquor).

Oxley Dry is one of the few gins that are cold distilled. Typically, gins are distilled at a temperature of around 80°C. Oxley has introduced a new technique: distillation at -5°C and under vacuum. In this way, the flavor of the spices remains completely intact. Production takes place on a small scale, to monitor the quality of each bottle of gin. Oxley Dry is a gin for gin aficionados, with one taste different from another. It's worth a try, especially as there are only 240 bottles produced per day, so this gin is hard to come by.
