100% Touriga Nacional grape variety. A special parcel in our Quinta do Ribeiro Santo. Harvest by hand. Total destemming and decanting at low temperatures for 24h. The first fermentation happened in a stainless steel vat. An in-tank batonnage was followed for 3 months. The second fermentation followed the traditional method of fermentation in bottle, which was held in a cool cellar for 24 months. Light and refined salmon color. Delicate and engaging aromas of apricot, some tangerine and slight toast. Lovely harmony between acidity and structure. Fine bubble offering complexity and freshness. Fermentation only in stainless steel vats, with temperatures rounding the 16ºC for 3 weeks Traditional method of fermentation in-bottle, in a cool cellar, for 18 months, followed by the degorgement.Straw-coloured, green apple with tropical fruit aromas. The grapes are unloaded into the membrane press, where they are crushed and the must is extracted. The must is cooled, decanted and transferred to a stainless steel tank where it will undergo fermentation, with temperature control. After fermentation, the wine naturally settles in the tank, being cleaned at the end of the year, when it is prepared to carry out the bottling of sparkling wine, with free yeasts. The bottles of sparkling wine go to the cellar to carry out the fermentation in the bottle at a controlled temperature and in the absence of light. After fermentation, the bottles are kept in the cellar, where they are staged until regrinding and degorgement are carried out without the addition of sugar, at which point the product is ready for commercialization. Young, slightly golden in color, fruity with an elegant aroma, very fine and velvety bubble that melts in the mouth, with a present acidity that gives it a good presence in the mouth, in a creamy, fresh and balanced set. The Sparkling Soalheiro Espumante Bruto Barrica ferments and stews in used oak barrels for 12 months before the second fermentation. This stage will give the sparkling wine a more evolutionary and intense aroma character, as well as a broader and more persistent good texture. The permanence in the basement, the low and constant temperature for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho variety in a perspective of greater complexity and less fruit. The elaboration of a sparkling wine from the Alvarinho grape variety demands a careful selection of the grapes. Our tradition was based on the neutral fermentation in stainless steel to obtain the base wine with more fruit intensity. Soalheiro Bruto Barrica ferments and staggers in used oak barrels for 12 months before the second bottle fermentation. This stage will give the sparkling wine a more evolutionary and intense aroma character, as well as a broader and more persistent good texture. The permanence in the basement, the low temperature and constant for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho grape variety in a perspective of greater complexity and less fruit to which the sparkling classic Soalheiro has accustomed us. It has an intense yellow color, a fine, persistent bubble. The aroma reveals tertiary and vanilla aroma, denoting a good balance between acidity and alcohol. The taste presents persistence, complexity, but at the same time elegance. Contains sulfites.
