The wort resulting from this selection ferments the temperature controlled, obtaining the base wine for sparkling wine. This wine suffers, already in bottle, a second fermentation. The permanence in the basement, the low temperature and constant for several months allows this sparkling wine to show all the elegance of the Alvarinho variety. After this stage of fermentation and stage, degorgement is carried out, an operation that allows the elimination of the existing yeasts in the bottle and the replacement of the provisional metal capsule by the definitive stopper typical of the sparkling wine. It presents yellow citrine color, fine and persistent bubble. The aroma reveals the fruit of the Alvarinho variety, denoting a good balance between acidity and alcohol. The flavor has persistence and complexity. Contains sulfites.
