Aging on fine lees for 6 months with periodic batónnage. Second fermentation in bottle, by the classic method, followed by aging on lees and intermediate batônnages for 19 months, in the cellars of Convento da Cartuxa. Contains sulfites.

The Alvarinho grapes used in the Winemaking of the Sparkling Soalheiro are selected in the vines with a lower sugar concentration and fresh acidity implanted in soil of granitic origin between 100 and 200 meters of altitude. Melgaço, the northernmost region of Portugal, is protected by a series of mountain ranges that allow a perfect marriage between rainfall, temperature and the number of hours of sunshine required to better ripen the grapes of the Alvarinho variety. A perfect and consistent harvest. The summer months and specifically August had moderate temperatures during the day and cold nights that favored a slow maturation and the concentration of the aromas in the grapes. The early September dry season contributed to a perfect balance in Alvarinho. By 2016, flowering occurred two weeks later than the last harvest due to little rainfall in winter. This year we started harvesting in the first week of September to maintain the refreshing profile characteristic of Soalheiro. It has citrine yellow color, fine and persistent bubble. The aroma reveals the fruit of the Alvarinho variety, denoting a good balance between acidity and alcohol. The flavor has persistence and complexity. Contains sulfites.
