After careful selection of the grapes and harvest at the ideal point of maturation, the base wine fermented in a stainless steel tank, with controlled temperature, after direct pressing. Aging on fine lees for 6 months with periodic batónnage. Second fermentation in bottle, by the classic method, followed by aging on lees and intermediate batônnages for 19 months, in the cellars of Convento da Cartuxa. Contains sulfites.

Messias Baga Blanc de Noir
Careful selection of limestone clay soil plots planted with the Baga variety, taking into account its balanced concentration and freshness. Vinification of the base wine using delicate attention to the grape pressing stage. Decanted must fermented with temperature control. Second fermentation in bottle according to the traditional method in order to obtain an increase in structure and complexity. Sparkling wine with a pale copper color. Abundant fine bubble and dispersed foam cord. Intense nose reminiscent of red fruits, pottery and baking notes. In the mouth it reveals a smooth and creamy mousse, with hints of red and black fruits dressed in an intense and invigorating final acidity.
GIZ Cuvée de Noirs
Lightly pressed grapes with whole bunch. After fermentation in the bottle, a 28-month reservoir was added. 840 bottles were produced. Complex and well-defined aroma, with notes of red fruit (ripe cherry, raspberry) and light floral traces. Toast and brioche notes add aromatic complexity. In the mouth it shows to be an elegant wine, full of minerality and freshness, reflecting well the calcareous soils from which it comes. It is simultaneously a deep, structured and complex wine, with a long and persistent finish. Contains sulfites.
Soalheiro Bruto Rose
The grapes of Touriga Nacional (red grapes) and Alvarinho are produced in the municipality of Melgaço in vineyards with a balance between the sugars and the perfect acids for the elaboration of sparkling wine. The vineyards are implanted in soil of granite origin between 100 and 200 meters of altitude. Melgaço, the northernmost region of Portugal, is protected by a set of mountains that allow an exemplary marriage between rainfall, temperature and the number of hours of sunshine required for a slow and balanced maturation for the production of quality sparkling wine. The Touriga Nacional grapes characterized by the low color intensity in our region together with the Alvarinho grape variety are the basis of this very light Sparkling Soalheiro Brut Rose. The Touriga Nacional caste complements the Alvarinho variety by providing mouth structure giving elegance and persistence. The wort resulting from this selection ferments the temperature controlled, obtaining the base wine for sparkling wine. This wine suffers, already in bottle, a second fermentation. After this stage of fermentation and stage, degorgement is carried out, an operation that allows the elimination of the existing yeasts in the bottle and the replacement of the provisional metal capsule by the definitive stopper typical of the sparkling wine. Features pink salmon, thin, persistent bubble. The aroma is elegant and delicate. The taste is persistent and very deep with a pleasing complexity. Contains sulfites.
