Fermented wine with partial destemming at a controlled temperature (24-28ºC) when the must reaches the desired sweetness value, fermentation is interrupted by the addition of brandy (77%), later aging in oak wood, in the warehouses in Vila Nova de Gaia until it is bottled, between the 2nd and 3rd year, after approval. The Vintage Messias 2007 has a dark color and is complex in terms of smell, although the presence of red fruits is clearly noticeable. In the mouth it conveys strength and robustness, being a wine with an excellent taste balance where well-balanced tannins predominate, ending in a long and pleasant finish. It can be drunk now, but it does foresee a notable evolution in the bottle.

Throughout the twentieth and twenty-first centuries, the Symington generations have worked in Quinta do Bomfim and Quinta da Senhora da Ribeira creating, from these vines, wines superbly concentrated, intense and tannic when young, with aging appear the elegance and the perfume with aromas of violet and mint. The driest finish constitutes the distinctive brand image of the wines of this great company of Port Wines. Deep purple color, so dark that it's almost blue / black. This is a wine of great vigor, with excellent aromas of plums and cassis. In the mouth, it has the typical flavors of Dow's, licorice and spices, as well as great depth and structure. It presents surprising aromas of ripe fruit giving it a wonderful complexity, ending with vigorous and firm tannins and a typical spicy dryness. Offley Boa Vista Vintage 2011 Ruby

After gentle crushing with partial destemming, a very intense maceration was followed during the period of alcoholic fermentation, with which it was intended to obtain the highest possible extraction of the quality constituents in the films. This maceration is obtained through the steps of traditional granite winches, with controlled temperature at about 28ºC. During this phase not only a strict control of the fermentation temperatures, but also of the density was chosen, thus choosing the ideal moment for the addition of the neutral wine spirit necessary for the stop of fermentation. Very intense, of an almost opaque dark red . Aromatically very rich, the black fruit like plum, the balsamic aromas of resin and cedar, and some floral notes of the "subois", as well as spices such as cloves and nutmeg, stand out on the nose. In the mouth it has an excellent volume, good acidity, lively but well integrated tannins, and notes of black fruit, in particular the plum again, but also cherry. Its end is long and intense.
