The grapes are picked by hand and sorted twice. They are lightly pressed in a pneumatic press at low pressure to obtain a slow extraction. The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. Followed by selection on a mat of choice, 30% with destemmed and 70% whole bunch were introduced into the vat, allowing the extraction of color compounds and aromas more smoothly during 3 days of alcoholic fermentation totally in stainless steel vats, being bled from each vat. a small volume of must completing both alcoholic and malolactic fermentation in used French oak barrels. The grapes were manually harvested into 25kg boxes and immediately transported to the cellar where they were stored in the cold chamber for 24 hours. This was followed by grape selection and pneumatic pressing and decanting. The alcoholic fermentation started in a stainless steel tank with selected yeasts. After fermentation starts, the must was transferred to 500L barrels. The wine was kept in contact with fine lees. Aging for 8 months in barrels with battonage. The nose shows white fruit involved in light, very discreet smoky notes. The palate is unctuous, balanced and with a good acidity that gives it a fresh and prolonged finish. Contains sulfites.

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of the mulch in the fermentation of the grapes. The essence of woodcarving winemaking has changed little in more than two thousand years. In this process, the white grapes are slightly crushed by foot and manually destemmed on a ripanço table. Fermentation takes place, without stems, in pots with an average capacity of 1,600 liters at a temperature of around 28ºC, being controlled by watering the pots 4 times a day. Fermentation takes approximately 8 days, leaving the wine in contact with the masses. Aged in amphorae for a period of 4 to 10 months, depending on the vintage. During this period, a film of oil is placed to prevent oxidation. Amber color, aroma of dried fruits, especially hazelnut. Spices, evolved, white pepper, ripe kiwi, bread, liqueur, hay. Outstanding for its exceptional features, the Sandeman Porto Vintage 2016 is a wine that will age in the bottle for 30 or 40 years.
