Ferment in a cement mill, whole bunch with the traditional Douro tread. During fermentation, extraction is minimal, as are all interventions in this wine. It ages in a 1000 liter German oak foundre, over 50 years old, for 1 and a half years and is bottled by hand without filtering or sticking and with minimum levels of sulfites. Of dense violet color, typical of a fermentation with a lot of Touriga Franca in a wine press, the Yellow Schist is very floral on the nose, with some notes of rock rose and pink pepper. In the mouth it contrasts very fresh, black fruit of the forest and some white pepper with a mesh of firm tannins that make the finish very persistent. Contains sulfites.

Chryseia was produced from the best grapes extracted from the two vineyards of the Douro Valley of Prats & Symington, Quinta de Roriz and Quinta da Perdiz. Another property, Quinta da Vila Velha, which is privately owned by a member of the Symington family, has also contributed some of its finest grapes, as it has in all Chryseia harvests. It was aged in French oak barrels of 400 Liters for 15 months. The grapes were harvested in excellent condition, resulting in a very fine Chryseia. Contains Sulfites.

Malvasia Preta is one of the oldest varieties in the Douro, being present among the Vinhas Velhas of the region, although it was never produced as a single variety. With a distinct profile, it is combined with varieties such as Rufete, Tinta Francisca and Bastardo, which present more exotic and elegant wine profiles, living on intensity and acidity, as opposed to the structured and potent profile that the Douro usually presents us with. The curiosity that leads us to experiment with Malvasia Preta, essentially arises from the fact that it is an original variety from the Douro, being present in the region and resisting the harsh conditions of the terroir. The harvest is done by hand in small boxes to preserve the integrity of the Bical. The grapes are then gently pressed to respect the fruit. Only native yeasts are used. The must is pressed directly into our traditional barrels to be fermented. The maturation lasts for about 12 months on fine lees without batonnage and the blend is made in a tank for another 4 months. Throughout the aging process, our absolute priority is given to the true expression of the terroir and character of the vintage. It has not undergone any gluing or filtration. "Tola" is a precise wine and reveals the typical limestone character of Bairrada. It has a bright pale yellow color. On the nose, the wine opens up deeply, intense and elegant aromas emerge: floral notes of white flowers, peach blossom, pear, honey, grilled almonds, sometimes even exotic woods. On the palate, the texture is silky and dominated by a harmony of contours that never transmit any weight. The aftertaste is exceptionally persistent with smoky hints and enhances the fineness of the set with a persistent acidity. This is a mineral wine suitable for refined cuisine. Contains sulfites.
