Crushing with total destemming and pre-fermentation pellicular maceration in stainless steel vats at low temperature for a period of 48 hours. After manual harvesting and transport to the cellar in small boxes (18kg-20kg), the bunches were hand-de-stemmed and the grapes trodden by foot in a small press.
