The wine Scala Coeli (whcih in Latin means “stairway to heaven”) owes its name to the Monastery of Santa Maria Scala Coeli. commonly known as Carthusian Monastery, where the Carhusian monks remain in silence and prayer. It results from the best vinifications of each year of less traditional grape varieties in the Alentejo, was produced for the first time, in the harvest of 2008. Contains Sulfites.

The grapes were harvested very early, before the painter, to ensure acidity and natural freshness. They were manually harvested into small boxes in order to preserve their quality. After careful selection and sorting at the entrance to the cellar, the grapes were destemmed and gently pressed. Fermentation took place at low temperatures in stainless steel vats. Part of the batch fermented and aged in used 500 liter barrels. Pale pink color. Fine and delicate aroma. In the mouth it is fresh and structured, predominating notes of raspberry and tropical fruit, with a prolonged aftertaste.

Total tanning process with spontaneous alcoholic fermentation, total space in direct skin contact for 1 month. Aging for 1 year in used 600 Lts barrels. Dark, purple/black full bodied, it has aromas of cherry and grape, a pleasant touch of tobacco and spices. In the mouth it is a real charm, with a lot of ripe black fruit at the front, but there is a fine and sophisticated base of spices and a polished graphite character, soft and chocolatey tannins, and cherry acidity. Quinta da Fata Encruzado White

The harvest is done by hand and the grapes are transported to the cellar in small boxes. This is followed by pressing the whole grape in a press and settling in a cold stainless steel tank. Then the completely clean wort is transferred to other stainless steel tanks where it is fermented at a controlled temperature of around 15ºC. The alcoholic fermentation of the wine is kept in vats only with fine sludge for another 5 months with batonnage. Before bottling it is transferred and has natural stabilization and light filtration in order to maintain all its aromatic potential and structure. Contains sulfites.
