The wine Scala Coeli (whcih in Latin means “stairway to heaven”) owes its name to the Monastery of Santa Maria Scala Coeli. commonly known as Carthusian Monastery, where the Carhusian monks remain in silence and prayer. It results from the best vinifications of each year of less traditional grape varieties in the Alentejo, was produced for the first time, in the harvest of 2008. Contains Sulfites.

The grapes were manually harvested into 25kg boxes and immediately transported to the cellar where they were stored in the cold chamber for 24 hours. This was followed by grape selection and pneumatic pressing and decanting. The alcoholic fermentation started in a stainless steel tank with selected yeasts. After fermentation starts, the must was transferred to 500L barrels. The wine was kept in contact with fine lees. Aging for 8 months in barrels with battonage. The nose shows white fruit involved in light, very discreet smoky notes. The palate is unctuous, balanced and with a good acidity that gives it a fresh and prolonged finish. Contains sulfites.

Grapes harvested manually in small boxes and transported to the winery in a short time. Very smooth pressing of whole destemmed grapes. Fermentation in stainless steel vats followed by aging in used 225 liter French oak barrels for 24 months and minimum aging of 12 months in bottle. Open ruby color. Intense aromas of ripe red fruits wrapped in fine aromas of smoke, toast and cedar. On the palate it is dry, with a well-marked acidity. High concentration of red fruits and well balanced jam with mineral flavors such as leather and earth. Ends long, silky and very mineral. Contains Sulfites.

Fermentation with long and gentle maceration to extract the maximum potential from the variety. Malolactic fermentation took place in French oak barrels - Allier, where it aged for 12 months. The grapes are picked by hand prior to destemming and there is an automated selection process. These are gently crushed before being transferred to the fermentation in the vats where they are inoculated with a specially selected yeast culture and fermented at 25 ° C. During fermentation, the wines are gently macerated with the ability to mature in the bottle. Post Scriptum DOC features a deep ruby color, appealing ripe plum scents. Bulky and well structured body. Very elegant tannins, presenting a very fresh and long-lasting finish. It is ready to drink but reveals a high potential for aging. Contains Sulfites.

Grapes from a plot of the Quinta, the Corredoira vineyard. All grapes are hand-picked in 20 kg boxes. After a partial destemming and slight crushing, they go to the press where there is a slight contact between the skins and the must. Soft pressing and fermentation at medium/high temperatures in stainless steel vats. Finished fermentation in French oak barrels of 300 liters. Aged in barrels with total lees, with batonage, for 6 months. Vineyards with an average age of 35 years. Straw color, very complex and deep aroma. A lot of minerality with a light smoke, reveals citrus and fresh notes. Elegant and balanced palate, aromatic, with good volume and a very fresh and mineral finish. Contains sulfites.
